Abstract
Resistant starch enrichment is an effective strategy to improve the nutritional quality of cereal-based foods by reducing starch digestibility and glycemic response. In this study, jackfruit seed starch (JFSS) was chemically modified via polyphosphate cross-linking using sodium trimetaphosphate and sodium tripolyphosphate to produce resistant starch type IV. Polyphosphate modification significantly increased resistant starch content from 22.57% to 40.22%, accompanied by a marked reduction in rapidly digestible starch and starch hydrolysis rate. The modified starch exhibited improved water and oil absorption capacities and enhanced freeze–thaw stability. To evaluate its practical applicability, phosphorylated JFSS was incorporated into egg noodles as a partial wheat flour substitute. Noodles containing 10–30% modified starch showed increased resistant starch content, reduced estimated glycemic index, and acceptable cooking quality. These results demonstrate that polyphosphate-modified jackfruit seed starch is a promising functional ingredient for the development of low-glycemic noodle products, offering a value-added application for underutilized starch resources in food processing.
