Abstract

Craft brewing has developed extremely rapidly over the last decade and has established itself as a key element of innovation in the brewing sector. This publication examines the main trends shaping craft brewing, emphasizing beer styles as the basis for technological innovation. Special attention is paid to the use of special malts and non-traditional cereals and pseudo cereals raw materials, technological changes in the mashing, subsequent wort production, and fermentation stages. Some elements of the use of non-conventional yeasts as a way to create a new product range are examined. Another element of the publication is an examination of the changes in the hopping method and the related technological challenges. Data on the influence of various elements of the technological process that affect the beverage sensory profile, are presented. At the end of the publication, attention is paid to the craft industry in the context of sustainable development of the industry and technology. This review highlights craft brewing as a dynamic field in which creativity is supported by evidence-based process control and sustainability-oriented solutions.
